Turkey Picadillo

This was adapted from the Beef Picadillo recipe in  Philippine Recipes Made Easy - served with rice, it is quintessentially Pinoy comfort food in our home.

2 Tbsp oil (coconut oil for Paleo)

2 cloves garlic, minced

1 medium-sized onion, chopped

1 medium-sized tomato, chopped

1 to 1.5 lbs ground turkey

1 large potato, peeled and diced

1 medium carrot, peeled and diced

2 Tbsp fish sauce

1/2 to 1 cup water (depending on how much sauce desired)

1 tsp fine sea salt, or to taste

pepper to taste

1 small red pepper, diced

Heat oil in a medium-sized pan over medium heat. Sauté garlic in oil for 1 minute. Add onion and sauté for another minute or so. Add tomatoes and cook until vegetables are tender.

Add turkey to the pan and cook until almost browned. Add fish sauce. Once turkey is all browned, add the rest of the ingredients except for red pepper. Cover and bring to a boil. Simmer for 20 minutes, or until potatoes and carrots are tender.

Add red pepper and cook for 1-2 minutes more. Season to taste.

Serve over rice (or try cauliflower rice for Paleo).
